Biryani means heaven to Bengalis. Whether it's summer or winter, dum biryani with potatoes and meat – just hearing the name makes every Bengali's heart fill with joy. Can you get the homemade taste when you buy biryani from the market? So make dum biryani at home instead.
Ingredients
Chicken, sour yogurt, red chili powder, lime juice, turmeric powder, ginger paste, garlic paste, salt to taste, garam masala, whole cumin, coriander leaves, green chilies, mustard oil, onions, milk.
Method
First, the chicken needs to be marinated. Then add ginger-garlic paste, lime juice, spice powder and salt to taste. Meanwhile, boil the rice well and drain the water from it.
Add garam masala and ghee to the boiled rice. Mix well with the rice.
Cut the potatoes and mix them with salt and turmeric. Lightly fry the potatoes in mustard oil in a pan.
After frying and removing the potatoes, add onions. Fry them until red. Then remove the red fried onions as well. Put raw onions in the pan again and mix ghee, spices, and ginger-garlic paste with them.
Mix the marinated meat into this mixture. Keep stirring the meat in the pan until oil releases from the meat.
Then layer the boiled rice over the cooked meat. Add the red fried onions and potatoes to the pot. Mix in green chilies, saffron-soaked milk, rose water or kewra water, and a little ghee. Make this entire mixture in the pot.
Seal the mouth of the pot tightly. If needed, mix flour with water and seal the mouth of the pot with it. Keep it in the oven for quite some time. Then open the lid of the pot and serve the hot dum biryani.
