Sunday night special | Fenugreek leaf paratha with South Indian–style chicken fry: Here's the recipe

Sunday calls for a proper dinner spread, wouldn't you agree? But tired of eating the same old dishes? Besides, not everyone at home can have mutton. Instead, cook chicken the South Indian way. Serve it with special fenugreek parathas. Here's the recipe.

South Indian Style Chicken Fry

Ingredients

Chicken – 500 grams

Chopped onions – 1 cup

Ginger-garlic paste – 1½ tablespoons

Green chilies – 2–3 pieces

Turmeric powder – ½ teaspoon

Red chili powder – 1 teaspoon

Coriander powder – 1 teaspoon

Cumin powder – ½ teaspoon

Garam masala – ½ teaspoon

Curry leaves – 8–10 pieces

Lemon juice – 1 tablespoon

Salt – to taste

Oil – about 4–5 tablespoons

Method

Mix chicken with chili powder, coriander powder, cumin powder, ginger-garlic paste, lemon juice and salt. Marinate for 30–45 minutes.

Heat oil in a wok. Add the marinated meat. Fry on medium heat until lightly golden. Once fried, remove and set aside.

In the same wok, keep a little oil and remove the rest. In that oil, temper curry leaves and green chilies. Add chopped onions and fry until golden.

Now add the fried chicken to the wok. Mix well with all the spices and cook for 5–7 minutes. Finally, sprinkle garam masala and remove from heat. Your South Indian Style Chicken Fry is ready.

Methi Paratha Recipe

Ingredients

Flour — 2 cups

Fenugreek leaves — 1 cup (chopped)

Chopped coriander leaves — 2 tablespoons

Salt — to taste

Oil or ghee — 2–3 tablespoons (for kneading dough)

Method

Take flour in a large bowl. Mix chopped fenugreek leaves, chopped coriander leaves, salt and oil or ghee well into the flour. Add water little by little and knead well. Apply oil, cover and set aside.

After 20–30 minutes, cut equal-sized portions from the dough. Roll into triangular or round shapes as preferred, and fry with oil or ghee. Your fenugreek leaf parathas are ready.

First, wash and marinate the meat. Then knead the flour. Prepare the rest of the meat ingredients simultaneously. By then, 40 minutes will have passed. First, cook the meat. Then fry the parathas and serve them hot with the chicken.
