Even if there’s nothing else at home, a few eggs are always in the fridge. If you don’t feel like going to the market or if guests suddenly arrive, eggs come to the rescue. You may eat poached or boiled eggs for breakfast, or egg bhurji and egg curry with rice or roti every day. This time, try something a little different like Egg Moili. Here’s the recipe.

What you need?
Eggs: 3
Milk: 1 cup
Flour (maida): 2 tbsp
White oil: 2 tbsp
Chopped onion: ½ cup
Garlic paste: 1 tsp
Ginger paste: ½ tsp
Dry red chillies: 2
Panch phoron: ½ tsp
Salt: to taste
Curry leaves: a few
How to cook?
Boil the eggs first and peel them.
Heat oil in a pan and add dry red chillies and panch phoron.
After a few seconds, add the chopped onions and sauté lightly.
Add a little flour to the pan.
Once everything is fried together, add milk.
Add salt and a bit of sugar at this stage.

When the milk comes to a boil and thickens, cut the boiled eggs in half and add them to the gravy.
Let it cook for a few more minutes and sprinkle curry leaves on top.
Your Egg Moili is ready.
