Winter means fresh vegetables in the market, with stalls filled with greens. But if there is a little one at home who prefers chicken, getting them to eat vegetables can be quite a challenge. And how long can one continue cooking the same monotonous chicken curry or stew? This winter, try making green chicken curry with fresh spring onions and coriander leaves. This dish can win over not just children, but the entire family.

Easy Green Chicken Curry Recipe
Ingredients
1 kg chicken, 2 bunches spring onions, 1 cup coriander leaves, 5–6 green chillies, 1-inch ginger, 6–7 cloves of garlic, 1 chopped onion, 1/2 cup yoghurt, 1 tablespoon lemon juice, 2 spoons white oil, salt and sugar to taste.
Method
Steam the spring onions, coriander leaves, and green chillies in hot water for one minute. Strain them and transfer immediately to ice-cold water for some time. Then grind the spring onions, coriander leaves, and green chillies into a smooth paste using a mixer. Ginger and garlic can also be added at this stage. Mix lemon juice into the paste. The green spice mixture is now ready.

Marinate the chicken with yoghurt and the prepared spring onion paste. Add salt and sugar to taste. Let the chicken marinate for 30 minutes to one hour.
Heat oil in a pan and fry the chopped onions until they start changing colour. Add the marinated chicken and sauté well. When oil starts releasing from the pan, add a little hot water and cover it. Once the chicken is fully cooked, the green chicken curry is ready. Serve hot with roti or rice.
