Dahi Ki Shole is the perfect snack when guests come home. This North Indian snack is crispy on the outside and soft, creamy, and flavorful on the inside. Despite its rich taste, it requires basic ingredients already available in the kitchen. To make Dahi Ki Shole, one needs thick sour yoghurt, paneer, ginger-garlic paste, green chillies, coriander leaves, roasted cumin, garam masala, salt, all-purpose flour, cornflour, and breadcrumbs.
Prepare and mix
Start by tying the yoghurt in a clean cloth and hanging it for 3-4 hours to drain excess water. This makes it thick and creamy. In a large bowl, mix the drained yoghurt with paneer, ginger-garlic paste, green chillies, coriander, cumin, garam masala, and salt. If the mix feels too soft, add a little breadcrumbs to help shape it.

Shape, Coat, and Fry
To form the mixture into small elongated rolls, one first needs to apply oil to their hands. Make a thin batter with flour, cornflour, and water. Dip each roll in the batter and coat it with breadcrumbs. Heat oil in a pan and fry the rolls on medium heat until golden brown. Drain the excess oil.
Serve hot with mint chutney or tomato sauce. Sprinkle some chaat masala if required. Crispy, creamy, and full of flavour, Dahi Ki Shole is a snack that everyone will love at tea time or house parties.
