Chef Kunal Kapur’s Aam Panna recipe: Ingredients, steps and how to make this traditional summer drink at home.

As temperatures start to climb during these summer months, people are opting for traditional summer beverages. Among them is Aam Panna, prepared with raw mangoes. This drink is commonly consumed by people in India during these summer months.

A simple recipe for Aam Panna has been provided by Chef Kunal Kapur. This recipe uses common ingredients and is easily reproducible at home.

A seasonal drink that makes a comeback during summers

The main ingredient of Aam Panna is raw mango. It is commonly used during summers and with spices like roasted cumin and black salt. Mint is also used to add flavor to the drink.

The drink is prepared in concentrated form and then mixed with water before serving.

Ingredients (serves 6–8 glasses)

Raw mangoes – 500 g

Sugar – 1 cup

Black salt – 1 teaspoon

Roasted cumin powder – 1 tablespoon

Fresh mint leaves – a handful

Water – 2 litres

Regular salt – to taste

Black pepper powder – ½ teaspoon

Red chilli powder – teaspoon

Ice cubes – as required



Method

Peel the raw mangoes and cut them into pieces. Keep the seeds aside.

Add the mango pieces and seeds to a pan. Pour in water and add sugar, salt, black salt, roasted cumin powder, pepper and chilli powder.

Bring it to a boil, then cook on low heat for about 25–30 minutes until the mango softens.

Let the mixture cool. Remove the seeds and scrape off any pulp stuck to them.

Transfer everything to a blender, add mint leaves, and blend into a smooth mixture.

Store the concentrate in the refrigerator.

To serve, mix the concentrate with chilled water and add ice.

Stored and served as needed

The prepared concentrate can be kept in the refrigerator and used over several days. It is typically diluted just before serving.

Aam Panna is often included in meals or served during the afternoon when the heat is at its peak.
