NASA's upcoming Artemis II mission is expected to redefine the concept of food in space. Moving far beyond the stereotype of tubes and paste, the space agency has curated a diverse menu of 189 food and beverage items for the astronauts who are about to travel around the Moon on a 10-day mission.

As per the details shared by NASA, the menu has been prepared while considering the challenges of eating in space.

A menu designed for variety

The food system of the Artemis II mission shows a distinct shift towards comfort food and choice. It offers a variety of food options, including barbecued beef brisket, mango salad, macaroni and cheese, spicy green beans, nuts, granola, tortillas, and even maple cream cookies.

The main idea is to avoid “menu fatigue,” which is common in space missions. This is because the food served in space missions has been seen to impact both the appetite and the morale of the astronauts.

The astronauts are also given the option to choose their food in advance, which gives the food experience a personal touch. NASA has stated that the food options are carefully evaluated to ensure their nutritional value, storage, and compatibility.

Why hot sauce matters in space

Among the more talked-about inclusions are five varieties of hot sauce and a selection of beverages including coffee, green tea, lemonade, apple cider and cocoa.

The inclusion is not just about taste. In microgravity, bodily fluid shifts can dull the sense of taste. Spicy foods help counter this effect, making meals more enjoyable for astronauts during long missions.



With no refrigeration equipment on board, all food for the mission has to be ‘shelf stable.’ This means it is preserved through processes such as freeze-drying or thermostabilisation.

The food is prepared by adding water via water-dispensing equipment on board. A compact warming system is also used to warm the food. As NASA explained, space food must be easy to prepare, safe to consume, and nutritionally balanced under challenging conditions.

A step towards future deep-space missions

The menu for the Artemis II mission also signals an emerging trend in space travel. No longer is food simply an issue of survival. It is also an issue of performance.
